Yo!

I own an Akai MPD18 MIDI controller, and I'd really like to use its pads and buttons to work my way around OpenMPT (pushing play, switching row/cell, switching instruments, etc.)

I know I won't be able to get all necessary commands assigned, but doesn't matter as I will settle for the essentials. Can this be done?

If you can configure them to send out MIDI CCs, then yes.
