How can I tell OpenMPT that a particular sample plays a tone of G, so that it uses the correct pitch in patterns?

Currently there is no "root key" information for samples. You will have to transpose the sample (or instrument) up or down (Ctrl+A/Ctrl+Q by default) until a C really sounds like a C. Alternatively you can try the autotune feature (pitchfork icon) but it's not guaranteed to be as precise as doing a transposition.

Autotuning in Openmpt one of the best I tried, really like it. Always can using old school method like take perfectly tuned sine wave (C5 or A4 or another), play it and tune your samples by ear, or use small app in attachment.
