how would you do that, if possible, lets say putting a vst on a channel and then turning that vst off and on with a command?

Map a Zxx to its dry/wet ratio. This will not actually turn off the VST, but you won't hear its effects. Setting a plugin to bypass using a Zxx is not possible though.
