I fail to see a good reason for this, though. Debian is great for servers, so why the change?

Because Debian is *not* that great for servers. Seriously, though, it's an ease of installation issue. Many of the packages we rely on are readily available for Ubuntu, whilst they aren't for Debian, which meant that we were having to build our own packages the whole time.
